Ingredients (for 2)
- Scallions - 5 stalks - finely chopped
- Jumbo shrimp - 12 pieces - peeled and deveined
- Garlic - 4 cloves - minced
- Juice and zest of 1 lemon - 1 - juiced and zested
- Stone-ground yellow corn grits - 1 cup - none
- Chicken stock - 3 cups - none
- Butter - 2 tablespoons - none
- Olive oil - 2 tablespoons - none
- Parmesan cheese - 1/2 cup - finely grated
- Salt - to taste - none
- White pepper - 1/2 teaspoon - none
Preparation

Step 1 - 🍤🍋🧂Marinate the shrimps with garlic, lemon juice, 1 tablespoon of olive oil, salt, and pepper. Let it rest for 15 minutes.

Step 2 - 🍲🥣🌽In a saucepan, bring the chicken stock to a boil. Reduce the heat to low and add the grits. Stir continuously for about 20-25 minutes until they are tender.

Step 3 - 🍳🧈🌱In a separate pan, melt 1 tablespoon of butter and add 2/3 of the chopped scallions, Saute them until they are soft.

Step 4 - 🌽🧀🧂Whisk the cooked scallions into the grits along with grated parmesan. Season it with salt and keep it warm.

Step 5 - 🍤🔥🍽️Grill the shrimps on medium heat until they turn pink and have marks from the grill on both sides.

Step 6 - 🍤🍋🌿Serve the grilled shrimps over the scallion grits. Drizzle the lemon-garlic butter from the pan over it, garnish with the remaining scallions, thyme sprigs and lemon zests.
