This Mediterranean-style brunch recipe melds the earthy tender chard with tangy feta cheese, soft poached eggs, and toasty rye bread. The dish is colorful, flavorful, and a comforting robust menu for the chilly weather.
Ingredients (for 4)
- 1 bunch of chard - 1 bunch - washed and chopped
- 4 thick slices of rye bread - 4 thick slices - none
- 200g of feta cheese - 200g - crumbled
- 4 large eggs - 4 large - none
- 1 red onion - 1 - sliced and pickled
- Fresh dill - to taste - for garnish
- 1 lemon - 1 - zested and juiced
- 3 tablespoons of olive oil - 3 tablespoons - none
- Salt - to taste - none
- Black pepper - to taste - none
Preparation

Step 1 - 🍳🍃🍋Heat a tablespoon of olive oil in a large pan over medium heat. Add the chard and sauté for about 4-5 minutes until wilted. Season with salt, pepper and a squeeze of lemon juice.

Step 2 - 🍞🔥🍴Toast the slices of rye bread until crispy and brown.

Step 3 - 🥚💧🔥Fill a pot with water and bring it to a gentle simmer. Carefully poach the eggs one by one.

Step 4 - 🍞🍃🧀🥚Spread each toast with a mound of sautéed chard, sprinkle crumbled feta over the top. Place a poached egg on each toast.

Step 5 - 🍋🌱🍽️Garnish each toast with pickled onions, lemon zest and fresh dill. Finish with a drizzle of olive oil and serve immediately.
