This recipe infuses Mediterranean flavors with the seasonal delight of a vibrant rainbow chard. It's not your standard brunch but a lovely twist featuring a colorful veggie and creating a dish worthy of your feed.
Ingredients (for 4)
- 1 bunch rainbow chard - 1 bunch - stems separated and sliced, leaves torn into pieces
- Large eggs - 4 - none
- Large onion - 1 - finely chopped
- Red bell pepper - 1 - finely chopped
- Garlic - 2 cloves - minced
- Can whole peeled tomatoes - 1 can (28 ounces) - none
- Cumin - 1 teaspoon - none
- Paprika - 1 teaspoon - none
- Cayenne pepper - 1/2 teaspoon - none
- Feta cheese - 100 grams - crumbled
- Olive oil - 2 tablespoons - none
- Salt and pepper - to taste - none
Preparation

Step 1 - 🍳🌰🌶In a large skillet, heat olive oil over medium heat. Add the chopped onion, bell pepper, and chard stems, saute until they have softened.

Step 2 - 🧄🌶️🔥Stir in the minced garlic, cumin, paprika, and cayenne. Continue to cook until the mixture becomes fragrant.

Step 3 - 🍅🥫🧂Pour in the whole peeled tomatoes, breaking them down. Season the mixture with salt and pepper. Allow it to simmer until the tomatoes have thickened, this will take around 10 minutes.

Step 4 - 🥬🥘Stir in the torn chard leaves into the skillet.

Step 5 - 🍳🥚🔅Make small wells in the sauce and carefully break an egg into each well. Cover the pan and cook until the eggs are done to your liking.

Step 6 - 🧀🍽️😋Sprinkle the dish with crumbled feta cheese and serve straight from the skillet.
Additional
To make it vegan, you can use firm tofu instead of feta and chickpeas instead of eggs. It's a dish that little helpers can get involved in, stirring the pan or breaking the eggs. Shakshuka is a delicious and easy way to start your day. With this recipe, you'll never see chard the same way again.
