Miso-Apple Glazed Trout with Saffron Lentils and Pomegranate-Fennel Relish

- Large crisp apple — 1 large — Halve; coarsely grate one half and cut the other half into thin matchsticks.

- Small shallot — 1 small — Finely dice.
- Garlic clove — 2 cloves — Lightly crush.
- Saffron threads — 1/4 teaspoon
- White miso — 1 tablespoon
- Pomegranate molasses — 2 teaspoons
- Fresh ginger — 1 teaspoon — Finely grate.
- Lemon — 1 — Zest and juice.
- Sherry vinegar — 1 teaspoon
- Low-sodium vegetable broth — 3 cups
- Bay leaf — 1
- Extra-virgin olive oil — 3 tablespoons — Divide.
- Fine sea salt — To taste

Preparation
