This recipe marries the vibrancy of Japanese cuisine with the cozy comfort needed on a chilly day. A beautiful, brothy bowl of Miso Soba Noodle Soup with Delicate Winter Veg and Pan-Seared Scallops. It's not your typical miso soup though, featuring Dashi, a traditional Japanese stock that forms the basis of many soups and stews. Preparation

    Heat 1 tablespoon of vegetable oil in a saucepan. Add the miso paste and cook on low heat for 2 minutes.

    Add Dashi stock to the saucepan, raise the heat and bring it to a boil.

    Reduce heat, add the sliced winter veggies into the saucepan and simmer until they become tender.

    In a separate pot, cook the soba noodles according to the package instructions. Then drain and rinse them in cold water.

    Add the cooked soba noodles to the soup in saucepan.

    Heat the remaining oil in a separate pan over high heat. Season the scallops with salt and pepper. Sear them on each side for about 2 minutes until they turn golden brown.

    Pour the soup with noodles into a bowl, place the seared scallops on top and sprinkle with sliced spring onions.
