This recipe adds a delightful twist to traditional Indian cuisine, featuring the earthy and meaty Portobello mushroom as its star. In this main course, the exotic flavours of Indian spices dance harmoniously with the richness of Portobello, creating a visually captivating dish that's perfect for a breezy day.
Ingredients (for 2)
- Large portobello mushrooms - 2 - sliced
- Canola oil - 2 tbsp
- Large onion - 1 - finely chopped
- Ginger-garlic paste - 1 tbsp
- Curry powder - 2 tbsp
- Coconut milk - 1 can
- Tomatoes - 2 - pureed
- Green chili - 1 - sliced
- Salt - to taste
- Fresh coriander - handful - chopped
- Basmati rice - - cooked
- Naan bread - 2 pieces
Preparation

Step 1 - 🍄💦🍳Heat 1 tbsp of oil in a pan and sauté the Portobello slices until they are browned and slightly crispy. Set aside.

Step 2 - 🥘🧅🔥In the same pan, add the remaining oil and fry the onions until they turn translucent.

Step 3 - 🍲🧄🍳Stir in the ginger-garlic paste, and cook for a minute until fragrant.

Step 4 - 🍛🌿🥣Add the curry powder and mix well.

Step 5 - 🍅🥥🌶️⏰Pour in the tomato puree, coconut milk, green chili, and salt. Simmer for around 15 minutes until the sauce thickens.

Step 6 - 🍄🍲🔥Add the sautéed mushrooms into the curry and simmer for a couple more minutes.

Step 7 - 🍛🍚🍞Garnish with fresh coriander before serving with basmati rice and naan.
Additional
Kids can help in cleaning the mushrooms, setting the table and serving the dishes. It's a hearty and healthy dish. For a non-veg version, add some sautéed shrimp.
