Re-conceptualizing classic Indian flavors, we've brought together the savory spices and the sweet burst of autumn grapes, crafting an enchanting fusion dish.
Ingredients (for 4)
- Boneless chicken thighs - 1.1 lbs
- Fresh purple grapes - 2 cups
- Ginger - 1 tbsp - grated
- Garlic - 1 tbsp - minced
- Garam masala - 2 tsp
- Turmeric - 1 tsp
- Paprika - 1 tsp
- Fresh cilantro - - for garnish
- Neutral cooking oil - 2 tbsp
- Salt - to taste
Preparation

Step 1 - 🐔✨🕒Start your preparation by marinating 500g boneless chicken thighs with 1 tsp each of turmeric, paprika, 2 tsp of garam masala, 1 tbsp each of grated ginger and minced garlic, and add salt to taste. Let it sit for at least 20 minutes.

Step 2 - 🍳🔥Place your skillet on medium heat and add 2 tbsp of neutral cooking oil.

Step 3 - 🍳🐔🍽️Add your marinated chicken to the skillet and let it cook until it's browned and fully cooked. This should take around 15-20 minutes.

Step 4 - 🍇🍲🔥Put 2 cups of fresh purple grapes into a small saucepan and simmer on low heat until they're soft. Mash the grapes to release their juices and continue cooking until the juice has reduced and the chutney is thickened.

Step 5 - 🍽️🍇🌿On a plate, place the cooked chicken and generously drizzle with the homade grape chutney. For finishing touch, garnish with fresh cilantro before serving.
