For a unique twist on traditional barbecue, we're going to infuse a bit of African-inspired magic in this outdoor grilling dish. The star of the show is our refreshing raspberry and chili glaze, which is a vibrant blend of sweet, tart, and heat that truly elevates your BBQ game. Partnered with juicy chicken skewers and a side of tangy coleslaw, it's a symphony of flavors that'll leave you craving for more.
Ingredients (for 2)
- Fresh raspberries - 1 cup - no prep
- Chili flakes - 1 teaspoon - no prep
- Chicken breast - 2 pieces - cut into chunks
- Fresh lemon juice - 2 tablespoons - no prep
- White wine vinegar - 1 tablespoon - no prep
- Sugar - 2 tablespoons - no prep
- Skewers - 4 - soaked in water if wooden
- Cabbage - 1/2 head - shredded
- Large carrot - 1 - shredded
- Mayonnaise - 2 tablespoons - no prep
- Olive oil, salt and pepper - to taste - no prep
Preparation

Step 1 - 🍇🌶️🥘In a saucepan, combine raspberries, sugar, chili flakes, and white wine vinegar. Cook over medium heat until raspberries have broken down and mixture thickens, for about 15 minutes.

Step 2 - 🔍🌡️🍵Strain the glaze through a fine-mesh to remove seeds, then set it aside to cool.

Step 3 - 🍗🍋🍲In a bowl, marinate the chicken chunks with half the cooled glaze, salt, pepper, and lemon juice. Let it sit for atleast 30 minutes.

Step 4 - 🥬🥕🥣In a large bowl, combine shredded cabbage, shredded carrot and mayonnaise. Toss until well-coated, then season with salt and pepper.

Step 5 - 🍗🔥🍽️Thread the marinated chicken chunks onto skewers then grill over medium to high heat, basting occasionally with the remaining glaze, until golden and cooked through.

Step 6 - 🍽️🥗😋Serve the chicken skewers over a bed of coleslaw and enjoy your meal!

This recipe can be easily modified; substitute chicken with tofu for a vegan option or use different berries to shift the flavor profile. Let children help with basting the skewers or making the coleslaw. The raspberry glaze can be made ahead of time and stored for up to a week in the fridge.
