A slow-cooked braised beef dish with caramelised onions and mushrooms, infused with red wine, garlic and thyme, inspired by classic French cuisine. Perfect for a cosy night in.
Ingredients (for 2)
- Beef chuck roast - 1 lb - cut into 2-inch cubes
- Large onion - - thinly sliced
- Cremini mushrooms - 4 oz - sliced
- Red wine - 1 cup
- Garlic cloves - 2 - minced
- Fresh thyme - 2 sprigs
- Olive oil - 2 tbsp
- Salt - - to taste
- Pepper - - to taste
Preparation

Step 1 - π§ π³π₯Heat olive oil in a large skillet and cook onions until caramelized, stirring occasionally for about 20 minutes

Step 2 - π₯©π³π²In the same skillet, sear the beef on all sides until browned. Remove from skillet and place in slow cooker.

Step 3 - π§ ππ²Add the caramelized onions and sliced mushrooms to the slow cooker.

Step 4 - π·π§πΏπ§πΆοΈπ²In a mixing bowl, whisk together red wine, garlic, thyme, salt, and pepper. Pour the mixture over the beef, onions, and mushroom in the slow cooker.

Step 5 - β°π²π₯Cook on low heat for 8 hours or until the beef is tender and falls apart easily with a fork.

Step 6 - π½οΈπ₯ππ₯πΏπ§Serve with crusty bread, pasta, or mashed potatoes. Garnish with fresh thyme and additional black pepper.
Additional
This recipe can easily be adapted to feed more people by adjusting the amount of beef and adding more onions and mushrooms. You can also use different cuts of beef for variation, such as short ribs or brisket. Browning the beef before cooking is optional, but it adds rich flavor to the dish. To make this recipe more Paleo-friendly, use arrowroot powder to thicken the sauce instead of flour.
