Ingredients (for 4)
- Golden beets - 3 medium - peeled and sliced
- Oranges - 2 - peeled and sliced
- Feta cheese - 1/2 cup - crumbled
- Pistachios - 1/3 cup - chopped
- Mixed greens - 4 cups
- Olive oil - 3 tbsp
- Orange juice - 2 tbsp
- Lemon juice - 1 tbsp
- Honey - 1 tbsp
- Salt - 1/4 tsp

Additional
Try substituting the pistachios with chopped walnuts or hazelnuts for a different texture. You can make the dressing ahead and store in the fridge for up to 3 days. This salad is also perfect to pack for lunch. Just keep the dressing in a separate container and drizzle when you are ready to eat.
