Roasted Butternut Squash Vegan Mac 'n' Cheese

- Elbow macaroni - 2 cups - uncooked
- Olive oil - 2 tablespoons
- Garlic - 3 cloves - minced
- Unsweetened almond milk - 1 1/2 cups
- Nutritional yeast - 1/4 cup
- Red pepper flakes - 1/2 teaspoon
- Rosemary - 1 teaspoon - finely chopped
- Breadcrumbs - 1/2 cup
- Salt - to taste
- Black pepper - to taste

Step 1 - 🌡️🥘🔥Preheat your oven to 400°F. Toss the peeled and cubed butternut squash in 1 tablespoon of olive oil, and a sprinkle of salt and pepper. Lay them onto a baking tray and roast in the preheated oven for 20-25 minutes until the squash becomes tender.

Step 2 - 🍝💦🍽️Boil water in a pot and cook the elbow macaroni to al dente as instructed on the package. After cooking, drain the water and set aside.

Then add in the roasted butternut squash, almond milk, nutritional yeast, red pepper flakes, rosemary, salt, and pepper. Mix all these ingredients and blend using a hand blender until you achieve a smooth texture.
