- Sage leaves - 12 - divided
- Goat cheese - 1 cup - room temperature
- Medium sweet potatoes - 2 - cut into 1/2-inch rounds
- Olive oil - 2 tablespoons
- Chives - 1 tablespoon - finely chopped
- Crushed red pepper flakes - 1 teaspoon
- Salt - to taste
- Freshly ground black pepper - to taste
