This is a delightful twist to traditional Spanish dishes, combining hearty Rutabaga with the warmth of Spanish spices. The star of this recipe is Rutabaga, a root vegetable that's in season this time of the year. Its natural sweetness is balanced by the addition of smoky Spanish paprika and chorizo.

    Heat the olive oil in a large pan over medium heat. Add into it the chorizo links chopped into thick slices and cook until it releases its oil. Remove chorizo and set it aside.

    In the same pan, add the cubes of peeled and cut rutabaga and the finely chopped yellow onion. Cook until both are softened.

    Proceed to add the minced garlic cloves, diced red bell pepper and Spanish paprika to the pan. Continue to cook everything together for another 2 minutes.

    Place the cooked chorizo back into the pan and mix well. Season the mixture with salt and pepper to taste.

    Meanwhile, in a separate pan, fry 4 eggs sunny-side-up.

    Spoon the cooked rutabaga and chorizo hash into bowls. Top each serving with a sunny-side-up egg and a sprinkle of finely chopped parsley before serving.

Additional

Rutabaga is often overlooked but is full of nutrients. If you're looking to add a different flavor, smoked paprika could also be used for an added depth of flavor. For vegetarians, you can substitute chorizo with smoked tofu.
