This dish leans into late-summer Italian flavors in a way that feels elegant rather than expected: sweet chilled melon becomes a silky saffron-kissed sauce for seared shrimp and twirled pasta. Ingredients (for 2)
- Ripe cantaloupe or muskmelon - 2 cups plus 1/2 cup - peeled, seeded, cut into cubes, with 1/2 cup very thin slices reserved for garnish
- Linguine - 6 oz
- Large shrimp - 10 oz - peeled and deveined
- Shallot - 1 small - finely minced
- Garlic - 2 cloves - thinly sliced
- Basil leaves - 1 packed cup - divided into torn leaves and a few small whole leaves
- Lemon - 1 - zest finely grated and juiced
- Pistachios - 3 tbsp - toasted and roughly crushed
- Dry white wine - 1/3 cup
- Tomato paste - 1 tsp
- Saffron - 1 generous pinch - steeped in 1 tbsp warm water
- Calabrian chili paste - 1 tsp
- Parmigiano reggiano - 1/4 cup, plus more for serving - finely grated
- Unsalted butter - 1 tbsp
- Extra-virgin olive oil - 2 1/2 tbsp - divided
- Kosher salt - 1 tsp or to taste
- Black pepper - 1/2 tsp
Preparation

Step 1 - π€π§π§Bring a large pot of well-salted water to a boil. Pat the shrimp dry, then season with a little kosher salt, black pepper, and 1 teaspoon of the lemon zest.

Step 2 - πβ‘βοΈPuree the 2 cups of melon cubes in a blender until completely smooth. Refrigerate the very thin melon slices for garnish.

Step 3 - π€π³β¨Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the shrimp for 1 to 2 minutes per side until just cooked and lightly golden, then move them to a plate.

Step 9 - π¦π§πReturn the shrimp to the skillet. Add the lemon juice, grated Parmigiano Reggiano, and most of the remaining basil, then toss until glossy. Taste and adjust with more salt, pepper, or chili if needed.
