Incredibly scrumptious and aesthetically appealing, this breakfast recipe fused with French influence is something unique. Here we feature Shiitake mushroom, known to be packed with B vitamins and the potential to boost your immune system. We add a twist of seasonality and creativity to avoid predictability and cliches.
Ingredients (for 2)
- Shiitake mushrooms - 1 cup - finely chopped
- Crepe batter - 1 cup
- Fresh thyme - 1 tablespoon - minced
- Fresh parsley - 2 tablespoons - minced
- White cheddar cheese - 1/2 cup - shredded
- Heavy cream - 1/2 cup
- Unsalted butter - 2 tablespoons
- Sea salt - 1/2 teaspoon - to taste
- Freshly ground black pepper - 1/4 teaspoon - to taste
- Olive oil - 2 tablespoons

Step 1 - 🍄🧂🍳In a skillet, add olive oil and sauté the shiitake mushrooms until golden brown. Season with sea salt and freshly ground black pepper, then set it aside.

Step 2 - 🧈🍳🥞In a separate pan, melt the unsalted butter, then pour in the crepe batter. Swirl the pan to evenly distribute it. Cook the crepe until edges are golden brown, flip it to cook the other side. Repeat with the remaining batter.

Step 3 - 🍄🧀🌿Spread an ample amount of sautéed shiitake mushrooms on one half of a crepe. Sprinkle with shredded white cheddar cheese and minced fresh herbs (thyme and parsley).

Step 4 - 🥞🥛✨Fold the crepe in half, then again to form a triangle. Drizzle warm cream on top. Continue this process with the remaining crepes.
