Welcome to a delightful fusion of traditional Japanese dessert, introducing an unlikely star - the Cabbage. We've accented the sweet savoy cabbage with a touch of seasonal winter berries, sugar, and a decadent white chocolate ganache. Here is our unusual, yet delightful cold weather dessert.
Ingredients (for 2)
- Small savoy cabbage - 1/2 - finely shredded
- Mix of winter berries (cranberries, raspberries, blackberries) - 1 cup - fresh or frozen
- Sugar - 1/4 cup - more for sprinkling
- Heavy cream - 1/2 cup
- White chocolate - 4 oz - broken into pieces
- Vanilla extract - 1 tsp
- Salt - Pinch

Step 1 - π₯¬ππ₯Combine the shredded cabbage, mixed berries, and 1/4 cup of sugar in a medium saucepan. Cook on medium heat until the fruits break down and the mixture thickens. This should take around 15-20 minutes, then let it cool down.

Step 2 - πΆπ«π₯In a small saucepan, heat the heavy cream until it simmers, making sure not to let it boil. Remove from heat and add in the white chocolate pieces, whisk until smooth. Stir in the vanilla extract and a pinch of salt.

Step 3 - π₯£π¨β²οΈIn two dessert bowls, spoon the cabbage and berry compote and pour the white chocolate ganache in a lattice design. Sprinkle a bit of fresh shredded cabbage and sugar crystals on top. Let it set in the fridge for 30 minutes before serving.
