Drawing from the richness of Japanese cuisine, we have crafted a sensational pasta recipe featuring succulent shrimp and an array of seasonal vegetables. This dish is beautifully balanced in flavor with umami from soy sauce, sweetness from mirin, and a hint of heat from wasabi. The key component, buckwheat soba noodles, adds a unique earthy depth to the dish, perfect for the time of the year.
Ingredients (for 4)
- Large shrimp - 16 - peeled and deveined
- Soba noodles - 8 oz
- Medium carrots - 2 - julienned
- Baby bok choy - 4 - halved
- Green onions - 4 - finely chopped
- Cloves of garlic - 2 - minced
- Piece of ginger - 1 inch - minced
- Soy sauce - 4 tablespoons
- Mirin - 2 tablespoons
- Wasabi paste - 1 tablespoon
- Black sesame seeds - 2 teaspoons
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste

Step 1 - ๐ฆ๐ฅ๐Combine shrimp with wasabi paste, half of the soy sauce, and a dash of pepper. Let it marinate for 15 minutes.

Step 2 - ๐๐ฅ๐งHeat a pot of water over high heat for the soba noodles.

Step 3 - ๐ณ๐ฅ๐งIn a large saute pan, heat oil over medium heat. Add ginger and garlic, saute until they release their aroma.

Step 4 - ๐ฅ๐ฅฌ๐Add the julienned carrots and halved bok choy to the saute pan. Stir well, cover, and let them cook for 5 minutes.

Step 5 - ๐๐งโฑ๏ธWhile the vegetables are cooking, add the soba noodles to the boiling water and cook according to the package instructions, usually around 5 minutes.

Step 6 - ๐ฆ๐ฅ๐Add the marinated shrimp to the saute pan and cook for 2-3 minutes on each side, or until they turn pink.

Step 7 - ๐๐ฐ๐ฆOnce cooked, drain the noodles but keep some of the cooking water for later use.

Step 8 - ๐ฒ๐๐ฟAdd the cooked noodles, remaining soy sauce, mirin, chopped green onions, and a little bit of the reserved noodle water to the saute pan. Toss everything together and adjust the seasoning to taste.
