This vibrant and fresh Tex-Mex inspired brunch dish rejuvenates tradition by making cilantro the star. Light yet satisfying, it’s a delightful mix of scrambled eggs, tangy tomatoes, creamy avocados, and the standout ingredient – cilantro.

Ingredients (for 2)

Preparation

  1. Step 1 - 🧈🍳🔥
    Heat butter in a skillet over medium heat. As the butter melts, add the eggs along with salt and black pepper, and scramble them just until they are mostly cooked.
  2. Step 2 - 🍳🍅🌿
    Add half of the freshly chopped cilantro into the eggs and mix it through. On the side of the skillet, add your halved cherry tomatoes, warming them until slightly softened.
  3. Step 3 - 🍳🥑🌱
    In your skillet, place the avocado half and warmed tomatoes on the side of your eggs. Sprinkle the scramble with the remaining cilantro and, for garnish, sour cream, handful of alfalfa sprouts and crumbled queso fresco.
  4. Step 4 - 🍽️🔥😋
    Serve this dish immediately from the skillet, while everything is still warm and delicious.
