  • 1½ pounds beef chuck roast1½ poundscut into bite-sized pieces
  • 2 large carrots2peeled and cut into 1-inch chunks
  • 6 dried shiitake mushrooms6soaked and sliced
  • 4 cups dashi (japanese fish broth)4 cups
  • 3 tablespoons soy sauce3 tablespoons
  • 3 tablespoons mirin (sweet japanese cooking wine)3 tablespoons
  • 2 tablespoons sake2 tablespoons
  • 1 tablespoon canola oil1 tablespoon
  • 1 tablespoon sugar1 tablespoon
  • 4 green onions4sliced for garnish
  • Sesame seedsfor garnish

Preparation

    Heat the canola oil in a pan over high heat. Sear the beef on all sides after seasoning it with salt and pepper. Remove from heat.
