This dish combines the warmth of a slow-cooked stew with the bright, fresh flavours of Japanese cuisine. Radishes play a starring role, offering a delightful crunch and peppery zing, while Daikon, carrots, shiitake mushrooms, and beef chuck roast combine to create a comforting, umami-packed experience.
Ingredients (for 4)
- 1 large daikon radish - 1 - peeled and sliced into 1-inch-thick rounds
- 8 small red radishes - 8 - halved
- 1½ pounds beef chuck roast - 1½ pounds - cut into bite-sized pieces
- 2 large carrots - 2 - peeled and cut into 1-inch chunks
- 6 dried shiitake mushrooms - 6 - soaked and sliced
- 4 cups dashi (japanese fish broth) - 4 cups - none
- 3 tablespoons soy sauce - 3 tablespoons - none
- 3 tablespoons mirin (sweet japanese cooking wine) - 3 tablespoons - none
- 2 tablespoons sake - 2 tablespoons - none
- 1 tablespoon canola oil - 1 tablespoon - none
- 1 tablespoon sugar - 1 tablespoon - none
- 4 green onions - 4 - sliced for garnish
- Sesame seeds - for garnish - none
- Salt and pepper - to taste - none
Preparation

Step 1 - 🍳🥩🔥Heat the canola oil in a pan over high heat. Sear the beef on all sides after seasoning it with salt and pepper. Remove from heat.

Step 2 - 🥘🥕🍄Place the seared beef, daikon radish, red radishes, carrots, and shiitake mushrooms in the slow cooker.

Step 3 - 🥣🍶🥄In a separate bowl, mix the dashi, soy sauce, mirin, sake, and sugar together. Pour this mixture into the slow cooker.

Step 4 - ⏲️🔥🍲Cover and set the slow cooker on low heat. Let it cook for 7-8 hours, or until the beef is tender.

Step 5 - 🍽️🌱🌟To serve, sprinkle the dish with sliced green onions and sesame seeds for garnish.
