This dish brings together the hearty radicchio with the comforting warmth of a slow-cooked Chinese-inspired stew. Doused in a blend of soy sauce, ginger, and garlic, the bruised radicchio metamorphoses into a charming ingredient that is both sweet and bitter, perfect for a cozy meal.
Ingredients (for 4)
- Radicchio - 2 heads - chopped
- Chicken thighs - 1 kg - boneless and skinless
- Garlic - 6 cloves - minced
- Ginger - 2 inch piece - minced
- Soy sauce - 1 cup
- Chicken stock - 4 cups
- Brown sugar - 2 tablespoons
- Scallions - 1 bunch - chopped
- Sesame oil - 1 tablespoon
- Salt - to taste
- White pepper - to taste
Preparation

Step 1 - 🧂🍗🌶️Season the 1 kg of boneless, skinless chicken thighs with salt and white pepper to taste.

Step 2 - 🍗➡️🥘Place the seasoned chicken in the slow cooker.

Step 3 - 🧄🥣🥢In a bowl, whisk together the 6 minced garlic cloves, 2 inch piece of minced ginger, 1 cup of soy sauce, 4 cups of chicken stock, 2 tablespoons of brown sugar, and 1 tablespoon of sesame oil. Pour this mixture over the chicken in the slow cooker.

Step 4 - 🥬🥘💫Layer the 2 chopped heads of radicchio over the top.

This slow-cooked stew is excellent with a side of steamed jasmine rice to soak up the flavors. To make the dish pescatarian, replace the chicken with firm tofu or tempeh. Kids can help with layering the ingredients in the slow cooker.
