This dish brings together the hearty radicchio with the comforting warmth of a slow-cooked Chinese-inspired stew. Doused in a blend of soy sauce, ginger, and garlic, the bruised radicchio metamorphoses into a charming ingredient that is both sweet and bitter, perfect for a cozy meal.

Ingredients (for 4)

Preparation

  1. Step 1 - 🧂🍗🌶️
    Season the 1 kg of boneless, skinless chicken thighs with salt and white pepper to taste.
  2. Step 2 - 🍗➡️🥘
    Place the seasoned chicken in the slow cooker.
  3. Step 3 - 🧄🥣🥢
    In a bowl, whisk together the 6 minced garlic cloves, 2 inch piece of minced ginger, 1 cup of soy sauce, 4 cups of chicken stock, 2 tablespoons of brown sugar, and 1 tablespoon of sesame oil. Pour this mixture over the chicken in the slow cooker.

    Layer the 2 chopped heads of radicchio over the top.
