Ingredients (for 4)
- Large eggplant - 1 - charred and smokey
- Ripe peaches - 2 - pureed
- Mint leaves - 8-10 - extra for garnish
- Bourbon - 8 ounces
- Lemon - 2 - juiced
- Agave syrup - 4 teaspoons
- Crushed ice - as required
- Salt - a pinch
- Pepper - a pinch
Preparation

Step 1 - ππ₯βοΈChar a large eggplant over a gas stove until the skin is black and it's cooked through. Let it cool down afterwards.

Step 2 - ππ₯πͺοΈPeel the skin of cooled eggplant and scoop out its flesh. Blend it into a smooth puree.

Step 3 - ππππ₯In a cocktail shaker, put the mint leaves, peach puree, eggplant puree, lemon juice and agave syrup together.

Step 4 - π§βοΈπ₯Add bourbon, a pinch of salt and pepper, and the crushed ice to the mixture in the cocktail shaker.

Step 5 - π€πΈπShake everything in the cocktail shaker vigorously until it's well mixed.

Step 6 - πΈππStrain the cocktail into glasses, garnish with a fresh mint sprig and a slice of peach. Serve immediately.
Additional
Switch out the bourbon with soda water to make a refreshing mocktail version of this fusion drink. For a fun twist, you can also smoke the peaches on the grill for a few minutes before pureeing to add depth of flavor.
