  • Big leaves swiss chard4stems removed and leaves ripped into sizeable pieces

  • Free run eggs8for poaching
  • Egg yolks3for hollandaise sauce
  • Butter1/2 cupmelted and slightly cooled, for hollandaise sauce
  • Lemon juice2 tbspfor hollandaise sauce
  • White vinegarfor poaching eggs

Preparation

  1. Step 1 — 🍲🥬🔥
    In a pan over medium heat, add a splash of olive oil. Sauté the Swiss chard until it wilts, season with salt and pepper. Set aside and keep warm.

    Toast the English muffins and set them aside.
