Preparation

    In a pan over medium heat, add a splash of olive oil. Sauté the Swiss chard until it wilts, season with salt and pepper. Set aside and keep warm.

    Toast the English muffins and set them aside.

    In a pan of simmering water, add a splash of vinegar and poach the eggs.
