This brunch recipe, inspired by American cuisine, is not your typical eggs and bacon. It elegantly features Swiss chard, a leafy green that overflows with nutrients and offers a vibrant hue to any plate. Contrastingly paired with smoky ham and the delicate richness of hollandaise sauce, this dish is simultaneously hearty and elegant.
Ingredients (for 4)
- Big leaves swiss chard - 4 - stems removed and leaves ripped into sizeable pieces
- Smoky ham - 8 slices
- English muffins - 4 - halved
- Free run eggs - 8 - for poaching
- Egg yolks - 3 - for hollandaise sauce
- Butter - 1/2 cup - melted and slightly cooled, for hollandaise sauce
- Lemon juice - 2 tbsp - for hollandaise sauce
- White vinegar - - for poaching eggs
- Salt and pepper - to taste
- Smoky paprika - - for garnish
- Olive oil -
Preparation

Step 1 - 🍲🥬🔥In a pan over medium heat, add a splash of olive oil. Sauté the Swiss chard until it wilts, season with salt and pepper. Set aside and keep warm.

Step 2 - 🍞🔥👌Toast the English muffins and set them aside.

Step 3 - 🥚💧🍳In a pan of simmering water, add a splash of vinegar and poach the eggs.

Step 4 - 🥚🍋🧈🤝In a blender, combine the egg yolks, lemon juice, a pinch of salt and pepper. Blend until combined. Slowly pour in the melted butter with blender running until a creamy sauce is achieved.

Step 5 - 🥬🍞🍖🥚🍴Place a handful of wilted Swiss chard on each toasted English muffin half. Layer over 2 slices of smoky ham, and top with a poached egg. Spoon over the hollandaise sauce generously and sprinkle with smoky paprika.
Additional
The smoky ham can also be replaced with smoked salmon for a pescatarian alternative, or completely left out for a vegetarian version. Involving the kids? They'll love helping with the layering and generously spooning the hollandaise over the poached eggs!
