With the warm weather in New York City, we are inspired to create a light and refreshing side dish perfect for a spring dinner party. This French-inspired recipe combines sweet and savory flavors with a variety of seasonal vegetables and herbs.
Ingredients (for 4)
- Asparagus - 1 bunch - shaved into ribbons
- Snap peas - 1 cup
- Radishes - 6 - thinly sliced
- Cherry tomatoes - 1 pint - halved
- Mixed greens - 4 cups
- Lemon - 1 - juiced
- Olive oil - 1/4 cup
- Salt - - to taste
- Pepper - - to taste
- Crusty bread - 4 slices - cubed
- Garlic - 2 cloves - minced
- Fresh herbs (such as parsley, thyme, and chives) - 1/4 cup - chopped
- Butter - 2 tbsp
- Salt - - to taste
- Pepper - - to taste
