An exotic fusion of East meets West, crafted carefully to embrace the spirit of International Tea Day. The key ingredients of this βtea-infusedβ dish are earl grey tea and fresh strawberries, playing to the accord of summer vibes while accentuating the richness of tea.
Ingredients (for 4)
- Earl grey tea bags - 3
- Fresh strawberries - 250g - for coulis and garnish
- Gelatin - 2 teaspoons
- Heavy cream - 2 cups
- Milk - 1 cup
- White sugar - 1/2 cup
- Vanilla extract - 1 teaspoon
- Crushed earl grey tea leaves - 1 teaspoon - for garnish

Step 1 - π΅π₯π₯Bring milk and cream to a gentle simmer in a pan. Remove from heat, then add the tea bags and steep for 10 minutes.

Step 2 - π΅ππ₯Remove tea bags, add sugar and vanilla extract, and heat again until sugar dissolves.

Step 3 - π¨π₯π₯Sprinkle gelatin over 1 cup of hot water and let it dissolve. Stir the gelatin into the warm milk mixture.

Step 4 - π₯ββοΈPour the panna cotta mixture into glasses and refrigerate until set. This should take about 4-6 hours.

Step 5 - ππ₯£βοΈMeanwhile, puree the strawberries and push it through a sieve to make the coulis. Chill this in the fridge.

Step 6 - ππ¨π΅Just before serving, pour a layer of strawberry coulis on top of each panna cotta. Garnish with sliced strawberries and a sprinkle of crushed tea leaves.

Traditionally an Italian 'Cooked Cream', Panna Cotta is here infused with Earl Grey for a twist. You can substitute strawberries with your choice of berries and the earl grey tea with your favorite one for a different flavor profile. Involve kids in garnishing the dessert!
