This recipe combines the rich, nutty flavours of tahini with the tangy zest of citrus - two key flavour profiles in Middle Eastern cuisine. We use salmon, which holds up well to the vibrant flavours and perfectly complements the sumac-flavoured bread.
Ingredients (for 4)
- Salmon fillets - 4 - skin-on
- Fresh lemon juice - 2 tablespoons
- Tahini - 1/2 cup
- Garlic - 2 cloves - minced
- Flatbread - 4 pieces
- Sumac - 1 teaspoon
- Pomegranate seeds - 1/4 cup for garnishing
- Extra-virgin olive oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Preparation

Step 1 - 🌡️🐟🍋Pre-heat your oven to 450°F. Season the salmon fillets with salt, pepper and 1 tablespoon of lemon juice.

Step 2 - 🍳🔥🐟Heat a non-stick pan with 1 tablespoon olive oil over medium-high heat. Sear the salmon fillets skin-side down for 3-4 minutes, then transfer to the oven and bake for 10-12 minutes until cooked thoroughly.

Step 3 - 🥣🍋🧄While the salmon is cooking, prepare the tahini dip. Combine tahini, the rest of the lemon juice, minced garlic and salt in a bowl. Stir until well combined.

Step 4 - 🍞🔥🛢️Toast the flatbread, then lightly oil both sides and sprinkle sumac on top.

Step 5 - 🥪🐟🌰To serve, spread a layer of the tahini dip on the toasted flatbread. Place a salmon fillet on top and garnish with pomegranate seeds.
Additional
For an extra kick, add chopped fresh dill or cilantro to the tahini dip. To prepare this dish with kids, have them sprinkle the sumac and pomegranate seeds for some fun, culinary art!
