This recipe combines the rich, nutty flavours of tahini with the tangy zest of citrus - two key flavour profiles in Middle Eastern cuisine. We use salmon, which holds up well to the vibrant flavours and perfectly complements the sumac-flavoured bread.

Ingredients (for 4)

Preparation

  1. Step 1 - 🌡️🐟🍋
    Pre-heat your oven to 450°F. Season the salmon fillets with salt, pepper and 1 tablespoon of lemon juice.
  2. Step 2 - 🍳🔥🐟
    Heat a non-stick pan with 1 tablespoon olive oil over medium-high heat. Sear the salmon fillets skin-side down for 3-4 minutes, then transfer to the oven and bake for 10-12 minutes until cooked thoroughly.
  3. Step 3 - 🥣🍋🧄
    While the salmon is cooking, prepare the tahini dip. Combine tahini, the rest of the lemon juice, minced garlic and salt in a bowl. Stir until well combined.
  4. Step 4 - 🍞🔥🛢️
    Toast the flatbread, then lightly oil both sides and sprinkle sumac on top.
  5. Step 5 - 🥪🐟🌰
    To serve, spread a layer of the tahini dip on the toasted flatbread. Place a salmon fillet on top and garnish with pomegranate seeds.

Additional
