Our dish brings the robust flavors of Tex-Mex cuisine to the forefront while introducing an unexpected splash of sweetness from Persimmons. It is an interesting mΓ©lange of flavors that combines savory bread with the sweet, honey-like taste of Persimmons, a fruit that is at the peak of its season during winter.
Ingredients (for 4)
- Large ripe persimmons - 2 - peeled, and pureed (~1 cup)
 - Toasted pecans - 1/2 cup - coarsely chopped
 - All-purpose flour - 2 cups
 - Baking soda - 1/2 teaspoon
 - Baking powder - 1.5 teaspoons
 - Salt - 1/2 teaspoon
 - Cinnamon - 1 teaspoon
 - Nutmeg - 1/2 teaspoon
 - Light brown sugar - 1/2 cup
 - Eggs - 2
 - Butter - 1/2 cup - melted
 - Vanilla extract - 1 teaspoon
 
Preparation

                    Step 1 - π‘οΈπ₯πPreheat your oven to 350Β°F and grease a 9x5 inch loaf pan.

                    Step 2 - π₯£β¨πCombine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a large bowl.

                    Step 3 - π₯π―πΉIn a different bowl, whisk together the persimmon puree, brown sugar, eggs, melted butter, and vanilla extract.

                    Step 4 - βπ°π₯Gradually add the dry ingredients to the wet ones, mixing just until combined. Then fold in the toasted pecans.

                    Step 5 - π₯€π―πPour the batter into your prepared pan, then smooth the top.

                    Step 6 - π₯ππBake your mixture for 55-60 minutes or until a toothpick inserted into the center comes out clean.

                    Step 7 - πβ²οΈπLet the bread cool in the pan for 10 minutes. Then remove it to a wire rack to cool completely.
 
Additional
You can add a sprinkle of coarse sugar on top of the batter before baking for extra crunch and sweetness. Not into nuts? Feel free to leave out the pecans or substitute with your favorite nut.
