Thai-Style Roasted New Potatoes with Tangy Coconut Sauce

This is an irresistible Thai-inspired main course that showcases the novelty of tender, new potatoes. Ingredients (for 4)
- New potatoes - 500 grams - halved
- Olive oil - 1 tbsp
- Salt - to taste
- Coconut milk - 200 ml
- Kaffir lime leaves - 2 - finely chopped
- Lime juice - 1 tbsp
- Red chili - 1 - thinly sliced
- Cloves garlic - 2 - minced
- Cilantro leaves - handful - chopped
- Soy sauce - 1 tbsp
- Sugar - 1 tsp
Preparation

Step 1 - 🌡️🕟🔥Set your oven to preheat to a temperature of 200°C/400°F.

Step 2 - 🥔💧🧂Toss the new potatoes with olive oil and salt, then spread them on a baking sheet in a single layer.

Step 3 - 🥔🔥⏰Put your potatoes in the preheated oven and allow them to roast for about 20–30 minutes. They should be crispy and golden brown when done.
