Tricolor Independence Day Vegetable Biryani

For Indiaβs Independence Day, few dishes feel more iconic and celebratory than a fragrant tricolor vegetable biryani. This version layers saffron-orange rice, a white paneer and cashew layer, and a green herb-and-vegetable layer inspired by the colors of the Indian flag, making it especially striking for the occasion. Long-grain basmati rice, saffron, mint, cilantro, warm whole spices, paneer, and mixed vegetables create a dish that is traditional in spirit, festive on the table, and wonderfully aromatic.
Ingredients (for 6)
- Basmati rice - 2 cups - rinsed and soaked 30 minutes
- Mixed vegetables (carrot, beans, peas, cauliflower) - 3 cups - cut into bite-size pieces
- Paneer - 250 g - cubed
- Plain yogurt - 3/4 cup - whisked
- Onion - 2 large - thinly sliced
- Tomato - 2 medium - chopped
- Mint leaves - 1 cup - packed
- Cilantro leaves - 1 cup - packed
- Green chilies - 2 - chopped
- Ginger - 1 tablespoon - grated
- Garlic - 1 tablespoon - minced
- Saffron - 1/2 teaspoon - soaked in 3 tablespoons warm milk
- Milk - 1/2 cup - divided
- Cashews - 1/3 cup
- Pomegranate seeds - 1/4 cup - for garnish
- Lemon - 1 - cut into wedges
- Ghee - 4 tablespoons
- Cumin seeds - 1 teaspoon
- Bay leaves - 2
- Green cardamom pods - 4
- Cloves - 4
- Cinnamon stick - 1 piece - 2 inches
- Turmeric powder - 1/2 teaspoon
- Kashmiri red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Rose water - 1 teaspoon
- Warm water - 3 1/2 cups - for cooking rice if needed
- Neutral oil - 2 tablespoons
- Salt - 2 1/2 teaspoons - or to taste
- Sugar - 1/2 teaspoon
Preparation

Step 1 - ππ§β³Rinse the basmati rice until the water runs mostly clear. Soak it for 30 minutes, then drain well.

Step 2 - πΏπ§π₯Blend mint, cilantro, green chilies, half the ginger, half the garlic, 2 tablespoons of the milk, and a pinch of salt into a smooth green paste.

Step 3 - π§ π₯β¨Heat the neutral oil and 2 tablespoons ghee in a heavy pot over medium heat. Fry the sliced onions until deep golden and crisp. Remove half for garnish and leave the rest in the pot.

Step 4 - π₯π₯πAdd the cashews to the pot and fry briefly until lightly golden. Remove a few for garnish if you like.

Step 5 - π°ππ₯Add cumin seeds, bay leaves, green cardamom pods, cloves, and the cinnamon stick. SautΓ© for about 30 seconds until fragrant.

Step 6 - π π§π₯Add the remaining ginger and garlic, then the chopped tomatoes. Cook until the tomatoes soften and turn jammy.

Step 8 - π₯π₯¦π₯£Add the mixed vegetables and whisked yogurt. Cook for 4 to 5 minutes until the vegetables are coated and slightly tender. Divide the mixture equally into two bowls.

Step 10 - π§π€π²Add the paneer cubes to the second bowl. Keep this mixture pale to form the white layer.

Step 12 - π§‘π€πDivide the rice into three portions. Keep one white. Mix the second with the saffron milk for the orange layer. Tint the third with 2 to 3 tablespoons of the remaining milk mixed with a little green herb mixture for a soft green color.
