This recipe celebrates Pi Day with a visual stunner that features classic apple pie flavors. The crust is covered in a lattice pattern to represent the mathematical concept of the irrational number pi.
Ingredients (for 8)
- All-purpose flour - 2 1/2 cups
- Sugar - 1 tbsp
- Salt - 1 tsp
- Unsalted butter - 1 cup (2 sticks), chilled and cut into cubes
- Ice water - 1/2 cup
- Apples (granny smith, honeycrisp, and pink lady) - 6 cups, sliced
- Sugar - 1 cup
- Cinnamon - 1 tsp
- Nutmeg - 1/4 tsp
- Allspice - 1/4 tsp
- Salt - 1/2 tsp
- Unsalted butter - 1/4 cup
- All-purpose flour - 1/4 cup
- Lemon juice - 1 tbsp
- Egg - 1, beaten with 1 tbsp of water
- Demerara sugar - for sprinkling

Step 1 - π₯£πΌπ§In a large bowl, mix flour, sugar, and salt. Add chilled butter and cut in with pastry blender or fingertips until the mixture forms pea-size pieces.

Step 2 - βοΈπ§πDrizzle ice water over the mixture and mix until it forms a ball.

Step 3 - π¬οΈπ‘οΈπ°οΈDivide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4 - ππ§π₯§In a large bowl, mix sliced apples, sugar, cinnamon, nutmeg, allspice, and salt. Melt butter in a saucepan and mix in flour until smooth. Add butter mixture to the apple mixture along with lemon juice and toss to coat.

Step 5 - πππ₯§On a floured surface, roll out one dough disk into a 12-inch circle. Place it in a 9-inch pie dish, trimming the overhang to 1/2 inch. Roll out the other dough disk into a 12-inch square. Cut out the pi symbol in the center of the dough using a cookie cutter or knife.

Step 6 - π₯§ππ¨Pour the apple filling into the dough-lined pie dish. Place the pi cut-out on top of the filling. Cut remaining dough into strips and weave them in a lattice pattern on top of the filling. Brush with the egg wash and sprinkle with demerara sugar.

Step 7 - π©βπ³π₯ποΈBake for 60-70 minutes at 375Β°F, until the crust is golden brown and the filling is bubbling. Cool before serving.
Additional
To make it gluten-free, use a gluten-free flour mix. For a vegan version, substitute the butter with vegan butter and the egg wash with a non-dairy milk wash. Kids can help decorate the pie by cutting out the pi symbol and weaving the lattice pattern.
