This scrumptious soup turns the humble autumn turnip into a star. Balanced with classic Indian spices and rich coconut milk, this dish provides both warmth and comfort during the chilly days.
Ingredients (for 4)
- Medium turnips - 5 - pealed and cut into ½-inch pieces
- Coconut milk - 2 cups
- Vegetable stock - 4 cups
- Small onions - 2 - finely chopped
- Garlic cloves - 3 - minced
- Fresh ginger - 2 inch piece - pealed and grated
- Turmeric - 1 teaspoon
- Garam masala - 1.5 teaspoon
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Red chilli flakes - 1/2 teaspoon - optional
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cilantro - - for garnish

Step 1 - 🍲🔥🧅In a large pot, heat 2 tablespoons of olive oil over medium heat and sauté the finely chopped onions until softened.

Step 2 - 🧄🌶️🥄Add the minced garlic, grated ginger, 1 teaspoon of turmeric, 1.5 teaspoon of garam masala, 1 teaspoon of cumin, 1 teaspoon of coriander, and optional 1/2 teaspoon of red chilli flakes, stirring until everything is fragrant.

Step 3 - 🍲🥔🔂Add the 5 medium-sized, peeled and cut turnips to the pot and sauté them until slightly browned.

Step 4 - 🥣🔥⏱️Pour in 4 cups of vegetable stock, bring the mixture to a boil, then lower the heat and allow it to simmer until the turnips are tender.

Step 5 - 🍲🥣🌀With a handheld immersion blender (or a countertop blender in batches), blend the soup mixture until it's smooth.

Step 6 - 🥥🍲🔥Return the pot to heat, stir in 2 cups of coconut milk, and season the soup with salt and pepper to taste. Heat the soup until hot.

Step 7 - 🍲🌿🍽️Serve the hot soup, garnish it with cilantro. If you prefer, you can serve it with a side of warm naan bread for an added touch.
