Preparation

    In a large pot, heat 2 tablespoons of olive oil over medium heat and sauté the finely chopped onions until softened.

    Add the minced garlic, grated ginger, 1 teaspoon of turmeric, 1.5 teaspoon of garam masala, 1 teaspoon of cumin, 1 teaspoon of coriander, and optional 1/2 teaspoon of red chilli flakes, stirring until everything is fragrant.

    Add the 5 medium-sized, peeled and cut turnips to the pot and sauté them until slightly browned.

    Pour in 4 cups of vegetable stock, bring the mixture to a boil, then lower the heat and allow it to simmer until the turnips are tender.

    With a handheld immersion blender (or a countertop blender in batches), blend the soup mixture until it's smooth.
  6. Step 6 — 🥥🍲🔥
    Return the pot to heat, stir in 2 cups of coconut milk, and season the soup with salt and pepper to taste. Heat the soup until hot.
