A little about this dish

This recipe is a winterly adaptation of a Greek classic: Moussaka! Instead of lamb and dairy, we're relying on hearty lentils and a creamy vegan béchamel sauce. Eggplant and potatoes provide a satisfying, earthy base while warm spices and herbs create comforting undertones.

Ingredients (for 4)

  • Large eggplants2sliced and sweat with salt
  • Large russet potatoes2thinly sliced
  • Green lentils1 1/2 cupsrinsed and cooked
  • Can diced tomatoes15 oz can
  • Large onion1chopped
  • Garlic2 clovesminced
  • Cinnamon1 tsp
  • Dried oregano1 tsp
  • Allspice1/2 tsp
  • Almond milk or other non-dairy milk2 cups
  • Olive oil3 Tbsp
  • Flour1/4 cupuse gluten-free if necessary
  • Saltto taste
  • Pepperto taste

Preparation

  1. Step 1 — 🌡️🍆🔥
    Preheat your oven to 375°F (190°C). Sweat and rinse your eggplant slices, then roast them until lightly browned.
  2. Step 2 — 🥔💦🥵
    Take your thinly sliced russet potatoes and boil them until they are just tender, then drain the water.
  3. Step 3 — 🍳🍅🧅
    In a large skillet, cook your chopped onions and minced garlic in 1 Tbsp olive oil. Add the cooked lentils, diced tomatoes, cinnamon, oregano, and allspice. Let it simmer until most of the liquid is absorbed.

    In a separate pot, heat 2 Tbsp olive oil over low heat. Slowly whisk in your chosen flour to form a roux. After achieving a roux, slowly add in the non-dairy milk until it forms a béchamel sauce. Season with salt and pepper.
  5. Step 5 — 🍆🥔🥣
    In a baking dish, put half of the eggplant slices at the bottom. Add a layer of potatoes next and then spread half of the lentil mixture over the potatoes. Repeat this process and then pour the béchamel sauce over the final layer of lentils.
  6. Step 6 — 🔥🕓🍽
    Bake the dish in your preheated oven for 45 minutes or until the top is golden. Let it cool for 10 minutes before serving.

This dish is perfect for those cold nights and is sure to impress your guests. For a gluten-free version, replace regular flour with gluten free flour in the béchamel sauce.
