Preparation
-
Step 1 - 🌡️🍆🔥Preheat your oven to 375°F (190°C). Sweat and rinse your eggplant slices, then roast them until lightly browned.
-
Step 2 - 🥔💦🥵Take your thinly sliced russet potatoes and boil them until they are just tender, then drain the water.
-
Step 3 - 🍳🍅🧅In a large skillet, cook your chopped onions and minced garlic in 1 Tbsp olive oil. Add the cooked lentils, diced tomatoes, cinnamon, oregano, and allspice. Let it simmer until most of the liquid is absorbed.
-
Step 4 - 🍶🥄🧂In a separate pot, heat 2 Tbsp olive oil over low heat. Slowly whisk in your chosen flour to form a roux. After achieving a roux, slowly add in the non-dairy milk until it forms a béchamel sauce. Season with salt and pepper.
-
Step 5 - 🍆🥔🥣In a baking dish, put half of the eggplant slices at the bottom. Add a layer of potatoes next and then spread half of the lentil mixture over the potatoes. Repeat this process and then pour the béchamel sauce over the final layer of lentils.
-
Step 6 - 🔥🕓🍽Bake the dish in your preheated oven for 45 minutes or until the top is golden. Let it cool for 10 minutes before serving.
