Ingredients (for 2)
- Arugula - 2 packed cups, plus extra for garnish - None
- Olive oil - 1/2 cup plus 2 tablespoons, divided - None
- Parmesan cheese - 1/3 cup - freshly grated
- Pine nuts - 2 tablespoons - toasted
- Garlic cloves - 2 - peeled and minced
- Sweet potatoes - 2 medium - cut into 1-inch cubes
- Brussels sprouts - 16 - halved
- Red onion - 1 medium - cut into wedges
- Lemon juice - 2 tablespoons - None
- Sea salt - 1/2 teaspoon, plus extra to taste - None
- Cracked black pepper - 1/2 teaspoon, plus extra to taste - None

Step 2 - π₯π§ π₯¬πΆοΈπ₯£Toss the sweet potatoes, Brussels sprouts, and red onion in a large bowl with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Then spread evenly on a parchment-lined baking sheet.

In a food processor, combine 2 packed cups of arugula, 1/3 cup of freshly grated Parmesan cheese, 2 tablespoons of toasted pine nuts, 2 minced garlic cloves, 2 tablespoons of lemon juice, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Pulse till coarsely chopped. Then, with the food processor running, slowly add in 1/2 cup of oil until the pesto is smooth.
