While keeping the classic Italian flavours intact, this dish will transport you to the sunny coasts of Italy - sans dairy! The key ingredients for this unique recipe are fresh zucchini, garlic, and gluten-free spaghetti. A dash of chilli and handfuls of fresh herbs is what sets this dish apart from your run-of-the-mill pasta.

Ingredients (for 4)

Preparation

  1. Step 1 - 🍳🌶️🔥
    Heat 2 tablespoons of extra virgin olive oil in a wide skillet over medium heat. Add in 6 cloves of finely minced garlic and 1 teaspoon of chilli flakes. Sautee until the garlic becomes fragrant.
  2. Step 2 - 🥒🍳🔄
    Put 2 medium zucchinis, made into ribbons with a vegetable peeler, into the skillet and toss to combine. Keep sautéing until the zucchini becomes tender.
  3. Step 3 - 🍝🍅🌱
    Add 400 grams of boiled till al dente gluten-free spaghetti, 1 cup of halved cherry tomatoes, and a handful of roughly chopped fresh coriander to the skillet. Stir all the contents together, ensuring they're evenly distributed. Season with salt and black pepper to taste.
  4. Step 4 - 🍽️🌿🔥
    Divide the pasta among 4 plates. Garnish each serving with more fresh coriander, and serve the plates while the meals are still piping hot.
