In this recipe, we bring you a seasonal Japanese-inspired dish that's perfect for a Vegetarian diet. We use fresh zucchini and scallions and serve it over steaming hot rice and is perfect for a light summer dinner.
Ingredients (for 4)
- White rice - 1 1/2 cups - washed and drained
- Water - 2 1/2 cups
- Sesame oil - 1 tbsp
- Vegetable oil - 1 tbsp
- Zucchini - 1 large - ribboned
- Scallions - 1 bunch - sliced
- Soy sauce - 2 tbsp
- Mirin - 2 tbsp
- Sesame seeds - 1 tbsp - toasted
- Salt - - to taste
- Black pepper - - to taste
Preparation

Step 1 - ππ§π³Combine the rice and water in a pot and simmer for 18 minutes. Let it rest for 10 minutes.

Step 2 - π₯ππ§Heat sesame and vegetable oil in a pan over medium-high heat. Add zucchini and scallions, and fry for 2-3 minutes.

Step 3 - πΆπͺπ―Pour soy sauce and mirin, and fry for another minute.

Step 4 - π²π₯’πΏDivide the rice among 4 bowls. Top with the vegetable mixture. Garnish with sesame seeds, salt, and pepper. Serve warm.

Donburi is a Japanese dish consisting of fish, meat or vegetables served over steamed rice, usually in a bowl. It's derived from the verb 'donburu', which means to put something on top of a bowl of rice. You can customize this recipe by adding tofu, mushroom or carrots. This is a great dish for kids to help assemble.
