A little about this dish

In this recipe, we bring you a seasonal Japanese-inspired dish that's perfect for a Vegetarian diet. We use fresh zucchini and scallions and serve it over steaming hot rice and is perfect for a light summer dinner.

Ingredients (for 4)

  • White rice1 1/2 cupswashed and drained
  • Water2 1/2 cups
  • Sesame oil1 tbsp
  • Vegetable oil1 tbsp
  • Zucchini1 largeribboned
  • Scallions1 bunchsliced
  • Soy sauce2 tbsp
  • Mirin2 tbsp
  • Sesame seeds1 tbsptoasted
  • Saltto taste
  • Black pepperto taste

Preparation

  1. Step 1 — 🍚💧🍳
    Combine the rice and water in a pot and simmer for 18 minutes. Let it rest for 10 minutes.
  2. Step 2 — 🔥🍆🧅
    Heat sesame and vegetable oil in a pan over medium-high heat. Add zucchini and scallions, and fry for 2-3 minutes.
  3. Step 3 — 🍶🔪🍯
    Pour soy sauce and mirin, and fry for another minute.
  4. Step 4 — 🍲🥢🌿
    Divide the rice among 4 bowls. Top with the vegetable mixture. Garnish with sesame seeds, salt, and pepper. Serve warm.
