African Nectarine Salsa on Mini Injera Pancakes

Ingredients (for 4)
- Ripe nectarines - 2 - finely diced
- Red bell pepper - 1 - finely diced
- Small red onion - 1 - finely diced
- Jalapeño pepper - 1 - seeds removed and minced
- Fresh lemon juice - 2 tablespoons
- Honey - 1 tablespoon
- Fresh coriander - 4 tablespoons - chopped
- Salt - to taste
- Black pepper - to taste
- Teff flour - 1 cup
- Water - 2 cups
- Salt - 1/2 teaspoon

Preparation

Step 1 - 🍑🌶️🥣Combine nectarines, bell pepper, onion, jalapeño, lemon juice, honey, coriander, salt, and pepper in a large bowl and chill in the fridge for an hour for flavors to meld.

Step 2 - 🥣💦🧂In a separate bowl, mix teff flour, water, and salt until smooth. Let it rest for 10-15 mins.

Step 3 - 🔥🍳💦Heat a non-stick mini pancake pan over medium heat and spray with cooking spray.

Step 4 - 🥞⏲️🔄Pour a small amount of batter into the pan for each pancake. Cook for 2 minutes until edges start to lift, then flip and cook for another 1-2 minutes.

Step 5 - 🥞🍑🍽️Top each pancake with a generous spoonful of the nectarine salsa and serve immediately.
