This enticing recipe puts a new twist on traditional African-inspired fare, introducing an unexpected hero - the humble cabbage. Teamed with chicken, an array of spices, and gently stewed tomatoes, this dish becomes a vibrant display of taste and color.
Ingredients (for 2)
- Medium cabbage - 1/2 - coarsely chopped
- Chicken breasts - 2 - cubed
- Ripe tomatoes - 3 - diced
- Garlic cloves - 3 - minced
- Medium red onion - 1 - sliced
- Ground turmeric - 1/2 tsp
- Ground coriander - 1/2 tsp
- Cayenne pepper - 1/4 tsp
- Fresh parsley - a handful - finely chopped
- Olive oil - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Preparation

Step 1 - 🍳🔥💦Heat the olive oil in a large pan over medium heat.

Step 2 - 🧄🍛🔁Add the sliced red onion and minced garlic to the pan. Sauté for 3-4 minutes until they become soft and aromatic.

Step 3 - 🍗🧂🔄Add the cubed chicken to the pan. Season it with salt and pepper, then brown all the sides for about 5-6 minutes.

Step 4 - 🍅🧂🍲Add the diced tomatoes to the pan along with ground turmeric, ground coriander, and cayenne pepper. Stir well to combine all the ingredients.

Step 5 - 🍅🥫⏳Simmer the mixture until the tomatoes start to break down and form a sauce, this will take around 5 minutes.

Step 6 - 🥬🔁⏲️Stir in the coarsely chopped cabbage, making sure it's properly coated with the sauce. Cover the pan and let it simmer on medium-low heat for about 10 minutes until the cabbage becomes tender.

Step 7 - 🧂🌱🍽️Adjust the seasoning to your preference, garnish the dish with finely chopped fresh parsley before serving hot.
Additional
Feel free to experiment with different proteins - shrimp, tofu or chickpeas would all work perfectly! You could also add in more veggies if desired. Kids can help with chopping of veggies and stirring the stirring-fry under supervision.
