This enticing recipe puts a new twist on traditional African-inspired fare, introducing an unexpected hero - the humble cabbage. Teamed with chicken, an array of spices, and gently stewed tomatoes, this dish becomes a vibrant display of taste and color.

    Heat the olive oil in a large pan over medium heat.

    Add the sliced red onion and minced garlic to the pan. Sauté for 3-4 minutes until they become soft and aromatic.

    Add the cubed chicken to the pan. Season it with salt and pepper, then brown all the sides for about 5-6 minutes.
