For those chilly days when you want something warm, filling, and a bit unique, we bring you this American twist on a quick and easy black radish recipe - a veggie-packed hash, bursting with color and flavor. The primary ingredient in this dish is the crunchy, slightly bitter black radish, which pairs excellently with the savory flavors of bacon and bell peppers.
Ingredients (for 4)
- Large black radishes - 2 - peeled and diced
- Medium potatoes - 4 - peeled and diced
- Bell peppers - 2 (1 red and 1 green) - finely chopped
- Slices of bacon - 4 - diced
- Large eggs - 4
- Oil - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
- Chives - for garnish - finely chopped
Preparation
-
Step 1 - 🍳🥔🌶️Heat oil in a large non-stick skillet over medium heat. Add the diced black radish, potatoes, and bell peppers. Cook until tender.
-
Step 2 - 🥓🔥➡️While the veggies cook, crisp the bacon in another pan, then add it to the radish mix.
-
Step 3 - 🍳🥚🌞In the same bacon pan, carefully crack the eggs and cook sunny-side-up or to your preference.
-
Step 4 - 🧂🍽️🍳🌿Season the hash with salt and pepper, then divide among four plates. Top each serving of hash with a fried egg and garnish with chopped chives before serving.
Additional
This dish is flexible, feel free to swap out some of the ingredients for what you've got handy - sweet potatoes, different types of peppers, or even topping with a poached egg instead. To make this vegetarian, replace the bacon with mushrooms for that rich, umami flavor. Kids can help by washing the veggies or even cracking the eggs if they're old enough.
