This recipe for our 'Mexican' inspired main course features a seasonal ingredient - asparagus! We're combining it with a tomato and chipotle sauce, and serving it with quinoa for a healthy and filling meal.
Ingredients (for 4)
- Asparagus - 1 lb. - trimmed and drizzled with olive oil
- Cooked quinoa - 2 cups
- Onion - 1 large - diced
- Garlic - 2 cloves - minced
- Diced tomatoes - 1 can
- Chipotle peppers in adobo sauce - 1-2 - chopped
- Cumin - 1 tsp
- Smoked paprika - 1/2 tsp
- Olive oil - 1 tbsp
- Salt - - to taste
- Pepper - - to taste
Preparation

Step 1 - 🌡️🔥🍴Preheat oven to 400°F and roast asparagus for 15-20 minutes, until tender and lightly browned.

Step 2 - 🔥🍳🧅While asparagus is roasting, sauté onion and garlic in olive oil until softened and fragrant.

Step 3 - 🍅🥄🔥Add diced tomatoes, chipotle peppers, cumin, smoked paprika, salt, and pepper to the pan and bring to a simmer. Let the tomato mixture simmer for 10-15 minutes, until thickened.

Step 4 - 🥣🍛🌿To serve, spoon the tomato sauce over the roasted asparagus and sprinkle with cooked quinoa.
Additional
If you want to make this dish heartier, you could add some black beans to the tomato sauce, or serve with a side of rice. You can also adjust the spiciness of the dish by adding more or less chipotle peppers.
