- Asparagus — 1 lb. — trimmed and drizzled with olive oil
- Cooked quinoa — 2 cups
- Onion — 1 large — diced
- Garlic — 2 cloves — minced
- Diced tomatoes — 1 can
- Chipotle peppers in adobo sauce — 1-2 — chopped
- Cumin — 1 tsp
- Smoked paprika — 1/2 tsp
- Olive oil — 1 tbsp
- Salt — — to taste

Step 1 — 🌡️🔥🍴Preheat oven to 400°F and roast asparagus for 15-20 minutes, until tender and lightly browned.
