  • Asparagus1 lb.trimmed and drizzled with olive oil
  • Cooked quinoa2 cups
  • Onion1 largediced
  • Garlic2 clovesminced
  • Diced tomatoes1 can
  • Chipotle peppers in adobo sauce1-2chopped
  • Cumin1 tsp
  • Smoked paprika1/2 tsp
  • Olive oil1 tbsp
  • Saltto taste
  • Pepperto taste

Preparation

  1. Step 1 — 🌡️🔥🍴
    Preheat oven to 400°F and roast asparagus for 15-20 minutes, until tender and lightly browned.

    While asparagus is roasting, sauté onion and garlic in olive oil until softened and fragrant.

    Add diced tomatoes, chipotle peppers, cumin, smoked paprika, salt, and pepper to the pan and bring to a simmer. Let the tomato mixture simmer for 10-15 minutes, until thickened.

    To serve, spoon the tomato sauce over the roasted asparagus and sprinkle with cooked quinoa.
