This light, colorful, vegan dish takes inspiration from classic American BBQ traditions, blending satisfying textures and bold, smoky-sweet flavors. We'll be using juicy, ripe peaches and sweet corn straight from the summer harvest, combined with earthy black beans and topped by a tangy homemade barbecue sauce.
Ingredients (for 2)
- Ripe peaches - 2 - pitted and diced
- Fresh corn - 2 ears - kernels removed
- Black beans - 1 can (15 oz) - drained and rinsed
- Cilantro - a handful - roughly chopped
- Edible flowers - a handful - for garnish
- Lime - 1 - cut into wedges
- Bbq sauce - 1/2 cup
- Olive oil - 2 tbsp
- Salt - to taste

Step 1 - π₯π³π₯£Heat a grill pan over medium-high heat, and get your ingredients ready.

Step 2 - π½π³π₯£Toss the corn kernels in 1 tbsp of olive oil and a pinch of salt. Grill them on the heated pan until they begin to char. This should take about 8-10 minutes. Once done, transfer them to a large bowl.

Step 3 - ππ³π₯£In the same pan, add the diced peaches and grill them for about 2 minutes on each side or until they have nice grill marks. Then transfer these to the bowl with the corn.

Step 4 - π₯£β«π³Toss the rinsed black beans in 1 tbsp of olive oil and a pinch of salt. Put the pan back on medium heat and crisp up the beans for about 5-7 minutes. When they're ready, add them to the bowl with the corn kernels and diced peaches.

Step 5 - π½πβ«π―Drizzle the BBQ sauce over the corn, peaches, and beans in the bowl and toss the ingredients together until everything's nicely coated.

Step 6 - π₯πΏπΌπPlate your salad, garnish it with fresh cilantro and edible flowers, and give it a nice squeeze of lime just before serving.
Additional
The barbecue sauce can be store-bought or homemade. For an extra twist, add some diced jalapenos for a spicy kick or some vegan feta for added creaminess. Kids can definitely help with the prep work, such as slicing the peaches or husking the corn.
