This recipe brings a creative twist to traditional American brunch. Instead of the regular eggs and bacon, we're featuring beet in a unique and delightful way.

Ingredients (for 4)

Preparation

  1. Step 1 - 🍳🧅🫑
    Heat the olive oil in a large skillet over medium heat. Add finely chopped onions, minced garlic, and diced bell pepper. Sauté until they soften.
  2. Step 2 - 🥘🥣🔪
    Mix in the peeled and grated large beets. Continue to cook the mixture for another 5-7 minutes.
  3. Step 3 - 🍅🥫🌶️
    Add the spices, which include 1 tsp each of paprika, cumin, and chili powder. Add 4 cups of canned diced tomatoes, then let the mixture simmer for around 10 minutes.
  4. Step 4 - 🥘🥚⏲️
    Create four small wells in the mixture. Crack a large egg into each well. Cover the skillet and let it cook for about 10 minutes, or until the eggs are cooked to your liking.
  5. Step 5 - 🧀🍞🌱
    Sprinkle half cup of crumbled feta cheese over the top, along with some chopped fresh parsley for garnish. Serve the meal with toasted slices of whole wheat bread on the side.

Shakshuka originates from North Africa but has been adopted by many cultures worldwide, it's a great way to incorporate veggies in the morning. Kids can safely help you mix ingredients and tear the parsley for garnish. Not a fan of beets? Replace it with your favorite seasonal vegetable.
