- Sweet potato - 1 large - diced
- Black beans - 1 can - drained and rinsed
- Red onion - 1/2 - diced
- Olive oil - 1 tbsp
- Ground cumin - 1/2 tsp
- Chili powder - 1/2 tsp
- Garlic powder - 1/4 tsp
- Soft taco shells - 4 small
- Ripe avocado - 1 - sliced
- Greek yogurt - 1/4 cup
- Lime juice - 1 tbsp
- Salt - 1/4 tsp
- Fresh cilantro - 1/4 cup - chopped

Step 1 - ๐ก๏ธ๐ฅ๐Preheat the oven to 400ยฐF.

Step 2 - ๐ฅ๐ถ๏ธ๐ง๐ฅ๐ฅฃ๐๐จโ๐ณToss the diced sweet potatoes with olive oil, cumin, chili powder, and garlic powder in a large bowl. Spread on a baking sheet and bake for 20 minutes or until tender, stirring halfway through.
