Straddling the line between traditional and fusion, this Brunch Eggplant is inspired by Indian flavors. The star of the show, eggplant, is a fall gem, here is bathed in spices and cooked until it's sweet and velvety, while the accompanying elements add an unexpected crunch and tang.
Ingredients (for 2)
- Eggplant - 1 - medium, thinly sliced
- Whole grain bread - 4 - slices, toasted
- Plain greek yogurt - 1/2 cup
- Garam masala - 1 tablespoon
- Turmeric - 1/2 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Coriander leaves - handful - chopped
- Vegetable oil - 2 tablespoons
- Salt - to taste

Step 1 - 🥣 🌶️ 🧂In a bowl, mix garam masala, turmeric, cayenne pepper, and a pinch of salt.

Step 2 - 🍆 🖌️ 🧄Brush the eggplant slices on both sides with oil and sprinkle the spice mix evenly on them. Let them sit for 10 minutes.

Step 3 - 🍳 🍆 🌡️Heat a non-stick pan and cook the eggplant slices in batches until they are soft and golden.

Step 4 - 🥣 🍦 🌶️In a separate bowl, mix the Greek yogurt with a quarter teaspoon of garam masala.

Step 5 - 🍽️ 🍞 🍆To plate, stack a slice of the toasted bread, place an eggplant slice on top, add some spiced yogurt, and repeat creating a stack.

Step 6 - 🍽️ 🍦 🍛Serve it hot with a final dollop of yogurt on top and a sprinkle of chopped coriander.

Fun fact: Eggplant, or brinjal as it's known in India, is widely used in various Indian cuisines. It's believed to have originated in India where it's been cultivated for over 4000 years. It absorbs the spices quite well and grills beautifully, making it a preferred choice for many dishes. For a non-dairy version, replace the yogurt with a vegan alternative or with pureed avocado. To involve kids, let them brush oil and sprinkle spice mix on the eggplants.
