Celebrate the warm weather with this delicious Cajun-inspired brunch dish featuring fresh local shrimps, vibrant bell peppers, and a spicy kick from Cajun seasonings. It's a perfect and interesting way to introduce some New Orleans' flavors to your weekend brunch routine.
Ingredients (for 4)
- Large eggs - 4
- Heavy cream or milk - 1/4 cup
- Fresh shrimps, cleaned and deveined - 1/2 lb.
- Red bell pepper, cored and thinly sliced - 1/2 - cored and thinly sliced
- Yellow bell pepper, cored and thinly sliced - 1/2 - cored and thinly sliced
- Green bell pepper, cored and thinly sliced - 1/2 - cored and thinly sliced
- Cloves of garlic, minced - 2 - minced
- Onion, chopped - 1/2 - chopped
- Cajun seasoning - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh chives, chopped - for garnish - chopped

Step 2 - 🥚🥛🧂🌶️🥄In a bowl, whisk together the eggs, heavy cream or milk, salt, and black pepper.

Step 3 - 🍤🍳🔥🍴In an ovenproof skillet, heat the olive oil over medium-high heat. Add the shrimps and sauté for 2-3 minutes until cooked through, then transfer to a plate.

Step 4 - 🌶️🧅🧄🔪💥🍳Add the bell peppers, onion, and garlic to the skillet, and sauté for 5-6 minutes until softened and fragrant. Sprinkle the Cajun seasoning over the vegetables and stir to combine well.
