Cauliflower and Shiitake Risotto

In this recipe, we're going to put a unique twist on classic Italian cuisine, with a beautiful Cauliflower Risotto. Instead of using traditional Arborio rice, we'll be using grated cauliflower, keeping it light, and adding a surprisingly delightful crunch to your dish. With the added goodness of Shiitake mushrooms, this dish brings a marry of flavors which are both delightfully surprising and warmingly familiar.
Ingredients (for 2)
- Large head of cauliflower - 1 - grated
- Shiitake mushrooms - 1 cup - sliced
- Cherry tomatoes - 8 - halved
- Garlic cloves - 2 - minced
- Vegetable broth - 2 cups
- Olive oil - 2 tablespoons
- Nutritional yeast - 1/4 cup
- Basil leaves - a handful - finely chopped
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - π³π₯π‘Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2 - ππ§π³Add the sliced shiitake mushrooms and a pinch of salt into the skillet. Saute until they turn golden brown.

Step 3 - π³π²π±Add in the minced garlic and cook until it's fragrant.

Step 4 - π²β‘οΈπ₯£Transfer the cooked mushrooms and garlic into a bowl and set them aside for later.

Step 5 - π³π₯π₯¦In the same skillet, add the remaining olive oil and the grated cauliflower. Simmer until the cauliflower is slightly toasted.

Step 6 - π₯¦π²π₯£Pour in the vegetable broth and stir until the cauliflower becomes tender.

Step 7 - π₯¦π§π₯Add the nutritional yeast to the skillet and stir until it's well combined and the risotto appears creamy.

Step 9 - π³π π₯In a separate pan, roast the halved cherry tomatoes until they are slightly charred.

Step 10 - π₯£πΏπ₯Scoop the risotto into a bowl. Top it with roasted cherry tomatoes and a sprinkling of the chopped fresh basil. Season with additional salt and black pepper, if desired.
