There's nothing quite like the warm embrace of a Southern-inspired breakfast on a chilly morning. Our recipe today is a novel twist on a Southern favorite, giving you the much-loved grits and biscuits in a healthier avatar. We're using cauliflower — a versatile, fiber-rich vegetable — as a base for our 'grits', while buttermilk biscuits now become cheddar-flavored and cauliflower-infused.

Preparation

  1. Step 1 - 🌡️🔥🍽️
    Preheat your oven to 425°F or 220°C and lightly grease a baking sheet for the biscuits. Set aside for later use.
  2. Step 2 - 🍚🥦🥣
    Combine the fresh cauliflower rice and vegetable broth in a medium saucepan, bring it to a boil and then reduce heat. Let it simmer until it's tender and the liquid is absorbed.

    For the biscuits, combine almond flour, baking powder, a 1/4 teaspoon of salt, cold butter and half the cheddar cheese in a food processor. Roll out dough and cut into biscuit shapes, then place them on the baking sheet.

    Bake the biscuits for about 10-12 minutes, until they rise and turn golden. Sprinkle the remaining cheddar cheese on top and bake for an additional 2 minutes until the cheese is melted and bubbly.

    Season your cooked cauliflower rice with remaining salt, pepper, and some cayenne pepper. Stir thoroughly for even distribution of the ingredients.

    Evenly distribute the seasoned cauliflower rice onto four plates. Top each with an over-easy egg and garnish with thinly sliced green onions. Serve hot with the cheesy biscuits on the side.
