Children's Day Rainbow Spaghetti and Veggie Stars

Encouraging children to participate in food preparation helps cultivate their appreciation for food, from understanding where ingredients come from to mastering the basic skills of cooking. For Children's Day, we'll create a dish that is not only delicious but also visually exciting and interactive to make. Our starring ingredient, the primary source of fun and the color in this recipe is the rainbow spaghetti pasta, made with natural food coloring from fruits and vegetables.
Ingredients (for 4)
- Spaghetti - 10.58 oz
- Natural food coloring: beetroot juice - 6.76 fl oz (red)
- Natural food coloring: spinach juice - 6.76 fl oz (green)
- Natural food coloring: carrot juice - 6.76 fl oz (orange)
- Natural food coloring: blue pea flower tea - 6.76 fl oz (blue)
- Large bell peppers in multiple colors - 2-3
- Olive oil - 3 tablespoons
- Garlic - 2 cloves - minced
- Salt - to taste
Preparation

Step 1 - 🍝🌈🍲Cook the spaghetti in individual pots with each of the vegetable juices until al dente. Leave them to cool before mixing the colored strands together.

Step 2 - ⭐️🔪🌶Use a star-shaped cutter to cut out vegetable stars from your bell peppers.

Step 3 - 🍳🔥🍽Heat the oil in a pan, sauté the minced garlic until golden, and add the star-shaped peppers.

Step 4 - 🌈🍝💫Add the rainbow pasta to the pan with peppers and carefully stir-fry, making sure not to break the spaghetti strands. Season with salt to taste.

Step 5 - 🍽️🌈⭐Now it's serving time! Make sure that each plate gets a mix of the various colored spaghetti and is scattered with the star-shaped bell peppers.

This is a super fun recipe to make together with your kids! They can help wash the vegetables, squeeze the juices or cut out the star shapes. Make sure to supervise them! For protein, you can add in some chicken nuggets or tofu cubes in the mix, or perhaps a sprinkle of cheese!
