This unique dish marries the mouthwatering flavors of Chinese BBQ with the vibrant color and earthy sweetness of beet. Basted in a spicy-sweet glaze, and served with a tangy beet and apple slaw, this is an exciting twist on classic BBQ that is sure to impress your guests.
Ingredients (for 4)
- 2 racks of pork ribs, around 1 kg each - 2 racks
- 4 medium beets - 4 medium - peeled and shredded
- 2 granny smith apples - 2 - peeled and shredded
- 4 spring onions - 4 - thinly sliced
- ¼ cup of sesame seeds - ¼ cup
- ⅓ cup of hoisin sauce, 2 tablespoons of chinese five-spice powder, 4 tablespoons of soy sauce, 2 cloves of garlic - - crushed
- Juice of one lemon, 2 tablespoons of rice wine vinegar, 2 tablespoons of honey - - salt and pepper to taste
- Olive oil, salt, and pepper -
Preparation

Step 1 - 🐖 🌱 ⏰Combine the ingredients for the marinade and evenly rub it on the pork ribs. Let it sit to marinate for at least 2 hours, overnight if you have the time.

Step 2 - 🔥 🍖 ⏳Preheat your BBQ for indirect heat. Place the ribs bone-side down and cook for about 1.5 hours until tender. Remember to turn and baste with marinade every 20 minutes.

Step 3 - 🥗 🍎 🍋Mix the shredded beet and apple in a large bowl. In a separate bowl, whisk together the slaw dressing ingredients. Pour the dressing over the shredded fruit and vegetables and toss to combine.

Step 4 - 🍽️ 🥩 🥬Plate the cooked ribs and sprinkle with sesame seeds. Serve with a generous helping of the beet-apple slaw and a sprinkle of sliced spring onions.
