In honor of Chocolate Day, we've created a rich, luscious dessert that shines a spotlight on chocolate. Our key ingredients are quality dark chocolate and fresh red berries to provide a refreshing counterbalance. These two together encapsulate the essence of summer while making a decadent dish for Chocolate Day.
Ingredients (for 8)
- Quality dark chocolate (70% cocoa) - 7 ounces - chopped
- Heavy cream - 1.27 cups
- Vanilla extract - 1 teaspoon
- Digestive biscuits - 7 ounces - crushed
- Unsalted butter - 0.44 cups - melted
- Fresh mixed berries (raspberries, strawberries, blackberries) - 1.5 cups
- Sugar - 0.5 cups
- Lemon - 0.5 - juiced
Preparation
-
Step 1 - 🍪🧈🍽Mix crushed biscuits and melted butter together until thoroughly combined. Press mixture into tart pan to form an even, compact base. Chill for 30 minutes.
-
Step 2 - 🍫🥛🥄Heat the heavy cream until just boiling. Remove from heat and add chopped dark chocolate and vanilla, stirring constantly until you have a smooth, glossy mixture.
-
Step 3 - 🥮🍫❄️Pour your prepared chocolate ganache into the set tart base and smooth the top with a spatula. Refrigerate until set, usually takes 2-3 hours.
-
Step 4 - 🍓🍋🥣Blend the fresh mixed berries, sugar, and lemon juice until smooth. Press through a sieve to remove seeds, then refrigerate.
-
Step 5 - 🥧🍓🥄Once your tart is set, remove from the fridge and decorate with fresh berries. Serve slices with a drizzle of your homemade berry coulis.

Fun Fact: Did you know that dark chocolate is loaded with nutrients and could lower the risk of heart disease? While preparing the ganache, children can help with washing the berries and pressing the biscuit base into the tart pan.
