Ingredients (for 2)
- Dashi broth - 1 cup
- Fresh clams - 6-8 - scrubbed clean
- Snow peas - 1/2 cup - trimmed
- Shiitake mushrooms - 4 - thinly sliced
- Ginger - 1/2 inch piece - finely grated
- Soy sauce - 1 tbsp
- Mirin - 1/2 tbsp
- Green onions - to taste - thinly sliced for garnish
- Enoki mushrooms - to taste - for garnish
- Salt - small pinch

Step 1 - 🍲 🔥 🦪Bring dashi broth to a simmer in a medium saucepan and add fresh clams. Cook until clams open up, about 4-5 minutes. Discard any clams that do not open.

Step 2 - 🥦 🍄 🔪Add snow peas, shiitake mushrooms, and finely grated ginger to the broth. Cook for 1-2 minutes. Add soy sauce and mirin. Taste for salt and add a small pinch if needed.

Step 3 - 🍜 🍴 🌱Divide the soup between two serving bowls, making sure to distribute the clams evenly. Garnish with thinly sliced green onions and a small handful of enoki mushrooms.
Additional
This soup can easily be modified by adding in other seasonal vegetables like bok choy or radishes.
