Clams and Spring Vegetable Stir-Fry

Step away from the ordinary and embrace the exotic with this Asian-inspired brunch recipe. It pairs savory clams with seasonal spring vegetables, projecting the perfect balance of hearty and refreshing. Ingredients (for 4)
- Fresh clams - 2 lb - cleaned and debearded
- 1 bunch of asparagus - 1 bunch - trimmed and cut into 1-inch pieces
- Bell peppers - 2 - thinly sliced
- 1 red onion - 1 - thinly sliced
- Spring onions - 4 - chopped
- Garlic - 5 cloves - minced
- Fresh ginger - 1 piece, about 2 inches - grated
- Red chili flakes - 1 tablespoon
- Soy sauce - 3 tablespoons
- Oyster sauce - 2 tablespoons
- Rice wine vinegar - 1 tablespoon
- Sesame oil - 3 tablespoons
- Salt - to taste
- White sesame seeds - 2 tablespoons - for garnishing
- Fresh cilantro - - for garnishing
Preparation

Step 1 - π₯πΆοΈπΏHeat 1 tablespoon of sesame oil in a large wok or frying pan over high heat. Add red onion, bell peppers, asparagus, garlic, ginger, and chili flakes. Stir-fry for about 5 minutes until the vegetables start to soften.

Step 2 - π₯ππ΄Move the vegetables to one side of the wok. Add the remaining 2 tablespoons of sesame oil on the other side and add the clams. Cook until the clams open, about 5-7 minutes.

Step 3 - π₯π₯’π₯Add soy sauce, oyster sauce, and rice wine vinegar. Stir everything together and heat for 1-2 more minutes.

Step 4 - π₯π§π±Sprinkle in half of the spring onions and season with salt. Give everything a good mix.

Step 5 - π₯πΏπ΅οΈGarnish with remaining spring onions, fresh cilantro and white sesame seeds.
